In this lesson, let's make one of the most flavorful dishes in Vietnamese cuisine-- the Pho, or Vietnamese rice noodle soup!


Roasting bones & onions

4 pounds beef soup bones (shank and knee)
1 medium onion, unpeeled and cut in half
Making the Broth
The Broth
5 slices fresh ginger
1 tablespoon salt
2 pods star anise
2 ½ tablespoons fish sauce
4 quarts water
Soaking & Cooking  the Rice Noodles
The Rice Noodles
1 (8 ounce) package dried rice noodles
Assembling the Pho
Assembling
1 ½ pounds beef top sirloin, thinly sliced
½ cup chopped cilantro
1 tablespoon chopped green onion
The Toppings
1 ½ cups bean sprouts
1 bunch Thai basil
1 medium lime, cut into 4 wedges


Gathering   the Ingredients


Step 6
Soak the rice noodles in a bowl of room temperature water. Let it soak for an hour.
Drain the noodles afterwards.


Step 7
When you've drained the noodles, start heating the broth and let it simmer.


Step 8
Get a large pot of water and let it boil. Cook the noodles for a minute. Afterwards, drain it.


Step 10
Top each bowl with sirloin, cilantro, and green onion.


Step 11
Put a ladle of hot broth on each bowl of noodle.


Step 12
Stir the bowl until the beef is partially cooked and no longer pink. Do this for 1-2 minutes.


Step 13
Top the noodle bowl with bean sprouts, Thai basil, and lime wedges.
